Living in South Florida it isn’t easy finding reliable culinary colleges, it has been said that the different Johnson & Wales campuses aren’t as great as said to be, is this true? Know of any very good ones in the states?

Check out Scottsdale Culinary Institute at chefs.edu. They have a great reputation in AZ. There are other affiliated schools in other states, but I don’t know that much about them. Scottsdale Culinary also has two student-run restaurants here in town and they are really great! I think that’s the best way to tell if the students actually LEARN anything when they go to that school.
