I just bought the book “The Fundamentals of the Classic cuisine” by The French Culinary Institute

I’m having a problem reading and pronouncing the French Culinary Terms.

Do you know a website where I can find Phonetics for these French Culinary Terminologies?

I have been a foodie all my life and I am also a strict vegetarian aka dietary vegan. I love to cook at home and I think that it would be amazing if one day I could run and own a bed and breakfast where I could offer a Vegan menu. I figure to do this properly, I ought to earn a degree as a Vegan Chef first but I have no idea where I would go to school for this. (Btw, I do not and will not work with meat, dairy, or eggs so traditional culinary school is out of the question) I have looked online and I’ve had no luck in my area…I live near Trenton, NJ.

I am a vegetarian, and i really want to become a chef and go to college for the culinary arts. But, i refuse to work with meat, which is what most schools require you to do. So, does anyone know of any vegitarian culinary colleges? Thanks!

I had a good life two years ago but made a stupid decision, i went to culinary school and wasted two years and after realizing it wasn’t going to give me anything good i dropped out, i have nothing in mind, i don’t know what to do next, it feels my life is dead!
i looking for a job but you know the situation, don’t you? and also i want to make it to the top, i’m not a dumb ass, i’m a singer/songwriter, cartoonist but unnoticed so is there anything else left for me to do in this world? please give me some ideas so i can sort it out in my mind and won’t have to make mistakes again. thanks already.

The situation is i had a female friend during culinary school that i developed a friendship with and became part of my circle of close friends(i even got her hired at my job).In part because seemed to agree/share all my view points and offered me advice for my relationship with my gf.She was aware when we met that i had a gf(now fiancee) of 1.5 whom i was living with in her parents house. Well as time went on she started talking to me about how we would make the perfect couple …..and how me and my gf were mismatched.At this point i pulled back and she apologized for not respecting my relationship.Then i started having issues with my gf who started to behave jealous and a bit controlling because she disliked my female friend.My gf and i went on break so i choose to see if maybe this female friend and i might have something because she was very persistant. As it turned out we didn’t have anything really in common like i thought we did and the idea i had in my head of what kind of a couple we would be was non existent.She actually tried looking like my fiancee at one point.It lasted 3-4 weeks before i realized i missed my gf and actually when i made up my mind to later on propose to my gf.I tried leaving things off cool with this female friend but that didn’t work because after she found out my gf and i had worked things out 6 months later she went crazy.She called my cell 24/7 leaving messages and texts….got a hold of my home number…told my fiancees parents i was a cheater ETC. all untrue.All i ever did with this female friend was hook up while on break once from my gf nothing more or less.

Things have gotten worse because she has more or less told all my female co-workers that shes been my girl on the side,may be pregnant,was used because shes a dark skinned black female(im white),im only with my fiancee because she has light skin white girl (shes actually costarican/middle easter/european combo), and that i cheated with her this entire time. So now i have co-workers calling me a racist and most male co workers avoiding me because of all the drama!I brought this to my managers attention i was told (its a female manager)that its all here say.I have begun saving texts and messages she has sent to me but she is sending most to my fiancee at this point.Im at loss at what else to do?how can i get this ex.friend to listen to reason.
If i go to the police im unsure how helpful it would be because i live in nj and work in NYC

Culinary Arts College?

Ok so like I am majoring in Game Software Development at Westwood College Online and I have been a student there since May of 08. Well because they are wanting so much money now that I dont have and want me to apply for MORE loans (I am think I am at like $15,000 already, and they are already wanting another $14,000 by tomorrow and I still havnt filled out the loan). Well I want to transfer to a Culinary Arts school I think, I use to cook down at the local restuarant and I loved it and I watch the food network all the time. The only thing is that I need to keep a full time job because I have my own house that I am looking to buy in a few months($20,000 house). Now that all the background information is out of the way…….
Do you think it would be a smart idea to transfer school?
How hard would it be to transfer?
Do you think its a smart idea to take classes online?
If so where at??
What about the money that I already spent at Westwood?
I got stanford Loans so far if that helps.
Or Would it be better actually GO to college?
My total cost at WestWood College is over $75,000!!!
I currently Live in Central Nebraska

I am considering a new career as a chef.

I would like to be a line cook working on edible art and eventually run my own kitchen.

Does anyone knows which is a better culinary school or if there is another one, local, that is better?

I am stuck in Dallas, and I know the schools in Houston and Austin are better, but my current career is here.

Any information or advice would be very much appreciated!

I would add that I am planning on moving to New York in about 5 years and want to get started here in Dallas on my chef career. I figure I can start my education and career here and continue on with better education in New York.

I am 16 but really wanna learn the ways of the kitchen in cooking because one day i hope to be a chef however i’m not sure how to get into this. Please list restaurants that you know have apprentices or teach. Its not about money for me i simply wanna learn.
Please don’t list schools.
( i will soon be taking culinary school)

Which of these 2 schools look better on a Chef’s resume? I have the opportunity to choose from both schools and want to know if the training is comparable. Is one school better than the other or do they both over successful programs? Any chefs out there that have worked with graduates from both schools who can tell me which graduates where better prepared/skilled for the kitchen. ive been a vegan for over 2 years now and one day i want to have my own restaurant. im currently attending culinary school, but im afraid that since there are very few (and by few i mean one) classes that focus on vegan/vegetarian cooking, that its not going to be enough and im just wasting my money and time. i know that i need to get more experiance actually working in a vegan resturant first, but im just wondering if, education wise, there is anything else i should be doing.

I am a fairly skilled cook, but would like to expand my ability and knowledge of cooking. I’d like to be able to prepare and plan gourmet dishes properly and without recipes. I’m not interested in attending a full culinary school. Books are great, but I would prefer an on-line alternative. Are there any good websites for this sort of thing?

*I’m not looking for full certification. I simply would like to find a good website that might list step by steps on all of the key techniques, information on what spices and ingredients mix well with each other, suggestions on how to create your own recipes, and a step by step guide that will help build your skills and abilities from home, one stage at a time.

I am 20 years old and also a mother to a 3.5 year old girl named Serenity. I met a Filipino guy named Rodney when I was 14 and he was 20 years old going onto 21. I got pregnant when I was 16 years old with him and I never had any experience with children,no siblings and I never ever thought of having any kids.
When my daughter was born I had a C-section and I was under local anesthetic. I never got to see my daughter when she was born and I didn’t see her until 3 hours later. I had trouble later on in the months feeling that I loved my daughter after having her. And then my boyfriend Rodney was mistreating me, such a verbally abusing me and in 2006 he started to have a gambling problem. We just did not get a long and I did not want it around my daughter so I left him in March 08. I met a knew guy not too long after in May25,08. He is Korean and his name is Mike ( i have always been into Korean culture speaking,writing etc. since I was 12). I decided to go to school in September 08 to attend the Vancouver International Culinary Arts School and daycare lists here are 400 ppl waiting…so I decided to let my daughter live with Rodney for 1 year and I will see her on weekends etc. I moved out with my new current bf on Oct1st. And I didnt end up going to Culinary Arts School and now i am attending Vancouver Career College this Monday (nov3) to be a Resident Care Attendant. My current bf Mike does not like the fact that I have a child though but he does like my daughter very much. Since my daughter has left though I do not see her often and don’t really have the urge to. I really hate my ex and his whole family………and now my mom has turned on me because she thinks im a unfit mother and that I left Serenity to be with my current bf. My life is falling apart….my school cost $10,000 and my student loan will only give me $13,260. And my rent costs $500.00 a month. And its a 7 month course..so i need to work and I cant see my daughter hardly ever. Im so stressed and i want to leave EVERYONE behind…Rodney,his family, my family and I feel like my daughter is holding me back. I know this sounds horrible..but im not ready!! And I CANT take care of her properly…when my ex and i broke up my father always watched my daughter and I did not give her everything she needed. Am I horrible person? I am a very intelligent,pretty and I graduated. I am not your typical teen mother….when I was with my ex he took care of me financially he has a good job and I had a car etc. but everything got taken from me when we split. My current bf is also going to school and has no money because his school costs $45,000 for 2 years, he has a car though that i use. I feel so stressed and money will be crazy tight while I go to school..but i want to leave everyone I know behind me and go on…but then i think if I dont see my daughter for a long time and then decide to see her again when she gets a little older I will feel horrible to miss so much time with her and she will think I dont love her?!?!? but everyone treats me so horrible…even Rondeys sister who watches Serenity while rodney goes to work (she has 2 kids 3 &2) she for some reason said today she doesnt want to hear my voice and not call when serenity is there..get someone to call for me! Im done with it all..I need some advice..HELP!
I graduated from high school not college.
Also why would childrens aid be involved? She is being taken care of by her Father. And she has everything she needs from him.

Stupid to attend culinary/pastry school?

I have a business degree, but never got into the field I studied. Instead, I’ve been stuck in admin assistant jobs and although it’s been only three years since I’ve graduated, I have already been pigeonized as a lifelong secretary and it’s tough for me to switch into a project-oriented position. At this point, I’m completely fed up with the corporate world and sitting behind a desk all day.

My passion is cooking and baking and I would love to attend culinary/pastry school, but is this a stupid idea? I can’t even tell my friends b/c I know they’ll think I’m a complete idiot. Plus, I feel like it’ll be a slap to my parents’ faces for spending so much money putting me through school only to become a chef–although my goal is to own my own pastry shop or catering business one day.
