which culinary school in southern california is better?

I really want to go to culinary school right after high school but im confused on which one is a better school that will teach me the most and teach me what I will need to know to start on a path for a career in the culinary arts.
my choices are
-California School of Culinary Arts, in Pasadena
-Kitchen Academy, in Hollywood
-The Art Institute of California, in Santa Monica(not the one in san diego because it is far from where i live)
so if you hav any idea of which one i should go to help me out PLZ!!!!!
Is it too late to start a career in culinary arts?

I’m going to be 26 years old in about two months and I’m considering going to a culinary arts school. It’s something that I have always been interested in but never really pursued and I don’t have much experience. It seems like most chefs have years and years of experience. Is it too late to start now or should I go for it?
What state has high culinary salaries but cheap hosuing?

Im looking for a colder weathered state. Im not to happy with warm weathered climates. I need a high paying job in the culinary department. but i want a good size house for 2 possibly 3 for a good reasonable price. any help would be great? im currently living in Massachusetts, and i dont mind it here, but it gets pricey with all the taxes.

for my final in school i need to cook a meal ( im a culinary arts major) any way i have to have the entree two sides and a desert the main thing i have to have is turkey. it was the meat i was assigned to use. im trying to find recipes for turkey but all i can find is thanksgiving stuff. the recipes the school provides arent allowed to be used so i am haveing a tough time. if anyone can provide links with some great turkey recipes i would greatly appreciate it.
which should i got to school for first a degree in finance or culinary arts?

Pastry or culinary courses??

I’m 15 and im interested in becoming a pastry chef, and i love to bake I’m already known I bake for a bakery in my town and people will ask me to make cakes and all that for them.
I know i’m young but i would like to take baking, decorating courses this summer. To learn more, improve my skills anything that would be useful for the future.
so could you name some places where they offer courses this summer 2008 in Quebec or Ontario. Please or anywhere else as a last resort.

My teacher wants each of her students to cut up
1/4oz -Julienne Carrots
Bru noise Carrots
1/2 recipe of Bechamel
how much exactly is 1/4oz of cut carrots? we aren’t allowed to use our measuring devices at all. its difficult to pass this test if we aren’t allowed to weigh what we cut or measure. Our final product is our grade! help please?
do you have to go to a collage first before you can go to a culinary arts instutiuate?

can you just go to a culinary arts school right after you graduatie or do you have to go to a normal collage first? Plus can you major in culinary arts. Sorry but last question, do you guys know any good culinary arts schools?
